Summer Granola

This is a great recipe to prepare over the weekend so that Monday morning you have something yummy and nourishing for breakfast.


  • 2 cups of wholegrain oats

  • 1tsp cinnamon

  • 1/4 cup of whole natural almonds

  • 1/4 cup pumpkin seeds

  • 1/4 cup flaxseeds

  • 1/4 cup flaked almonds (optional)

  • 1/3 cup extra virgin coconut oil

  • 1/3 cup pure maple syrup

  • 1/4 cup dried goji berries

Preheat the oven to 160 degrees fan-forced.

Mix oats, cinnamon, nuts and seeds with combined coconut oil and maple syrup.

Mix well.

Place combined ingredients on a lined baking tray and cook for 30 minutes, until it is golden.

Halfway, mix the ingredients on the tray so both sides get toasted.

Cool and mix in goji berries.

Store in an airtight container.

Serve 1/2 cup of granola with 1/2 cup of mixed berries and a dollop of natural or coconut yoghurt with your choice of milk.
