Making your own muesli is super easy and doesn't have all the added sugar and preservatives. This takes about 15 minutes to make and cook. It is enough for one person for a week. Feel free to double the ingredients if making for your family.
I love this recipe because it is a good, healthy, nourishing breakfast that will give you the energy you need till lunch. Oats are a great source of dietary fibre and by adding the nuts and seeds, will help balance your blood sugar levels and keep you feeling full longer. Goji berries are high in antioxidants which can help boost your immune system by defending it from free radicals.
Ingredients:
3 cups of whole grain oats
3 tbs of nuts and seeds (your choice of chopped almonds, cashew nuts, sunflower seeds, pumpkin seeds)
3 tbs of shredded coconut
1 tsp of ground cinnamon powder
3 tbs of extra virgin coconut oil
3 tbs of pure maple syrup
Mix all of these ingredients and bake in a moderate oven till you have your desired colour, turning once. About 8 - 10 mins. Once cooled add 3 tbs of goji berries. Store in an air tight container till needed.
Serve with Greek style yoghurt, fresh strawberries and your choice of milk.
